Chicken & Mushroom Rice

Ingredients

¼ cup. Long grain white rice
2 tbsps. Vegetable oil
1 no. Onion, small, finely chopped
2 nos. Garlic cloves, finely chopped
2 nos. Red chilies, seeded and cut into slivers
225 gms. Chicken breast meat, finely chopped
85 gms. Bamboo shoots, chopped or cut into matchstick strips
8 nos. Chinese black mushrooms, dried, soaked for 30 minutes, drained and chopped
2 tbsps. Shrimps, dried
1 tbsp. Fish sauce
25 nos. Thai holy basil leaves
to garnish Thai holy basil sprig
As required Salt

Instructions 1. Cook rice. 2. Heat oil in a wok, and add onion and garlic. 3. Cook, stirring occasionally, until golden. 4. Add chilies and chicken and stir fry for 2 minutes. 5. Stir in bamboo shoots, mushrooms, dried shrimps, fish sauce and salt. 6. Continue to stir for 2 minutes, then stir in the rice and basil. 7. Serve garnished with basil sprig.
