  • 6 nos. Spring onions(Only the white parts diced)
  • 300 gms Potatoes, diced
  • 550 ml. Chicken or vegetable stock
  • 300 ml. Milk
  • 70 ml. Thick Cream
  • As required Black pepper, ground
  • As required Fresh chives, chopped
  • 45 gms. Butter
  • As required Salt

InstructionsInstructions  1.Heat the butter in a saucepan, add the leeks or white diced parts of the spring onions and potatoes and stir to coat with butter. 2.Cover and cook gently, stirring occasionally for 5 minutes, till they become soft. 3.Add the stock and bring to a boil, then cover and simmer for 15-20 minutes or until vegetables are tender. 4.Stir in the milk, then press the mixture through a sieve. 5.Leave it to cool then stir in the cream, salt and pepper. 6.Cover and chill thoroughly for atleast 2 hours. 7.Garnish with chives and serve in chilled bowls.
